Instructions
1-Gather all ingredients and prepare your workspace. Whisk 4 large eggs with ΒΌ teaspoon salt in a medium bowl to get started.
2-Prepare the goat cheese spread by stirring together 4 ounces goat cheese, 2 tablespoons chopped fresh chives, 2 tablespoons olive oil, 1 clove garlic (grated), and ΒΌ teaspoon onion powder until smooth. Set it aside for assembly.
3-Heat 2 teaspoons olive oil in a large nonstick skillet over medium heat. Add 3 ounces spinach and a pinch of salt, then cook until just wilted, about 1-2 minutes.
4-Spread the spinach evenly in the pan and reduce heat to medium-low. Pour in the egg mixture and cook without stirring until the edges begin to set.
5-Use a spatula to lift the edges and tilt the pan, allowing uncooked egg to flow underneath. Repeat until nearly cooked through, then fold the omelet into thirds for a rectangular shape and cook for another 30 seconds until set. Slice into four pieces.
6-Assemble the sandwiches by spreading the goat cheese mixture on each of the 4 toasted English muffin halves. Add one omelet piece, 1 tomato slice, thinly sliced red onion, avocado slices if desired, and microgreens or sunflower sprouts if desired. Serve with hot sauce for extra flavor.
