  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

– ½ cup low-sodium soy sauce

– ½ cup packed brown sugar

– ¼ cup water

– 2 tablespoons bourbon

– 1 teaspoon toasted sesame oil

– ½ teaspoon pepper

– 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces

– 2 tablespoons cornstarch

– 2 cups broccoli florets

– 3 tablespoons vegetable oil, divided

– 2 garlic cloves, minced

– 1 teaspoon grated fresh ginger

Instructions

1-Let’s walk through making this Bourbon Chicken Broccoli from start to finish it’s straightforward and fun. First, gather and prep all your ingredients: cut the 2 pounds of chicken thighs into 1-inch pieces, chop the 2 cups of broccoli florets, mince the 2 garlic cloves, and grate the 1 teaspoon of fresh ginger. This step sets you up for success and takes about 15 minutes.

2-Next, mix the sauce by combining ½ cup low-sodium soy sauce, ½ cup packed brown sugar, ¼ cup water, 2 tablespoons bourbon, 1 teaspoon toasted sesame oil, and ½ teaspoon pepper in a measuring cup. Microwave it for 1-2 minutes until hot, then stir to dissolve the sugar. In a bowl, toss the chicken pieces with 2 tablespoons cornstarch and 2 tablespoons of this sauce mixture for a nice coating.

3-Heat 1 tablespoon of the 3 tablespoons vegetable oil in a nonstick skillet until it shimmers, then sauté the broccoli until it’s bright green and slightly softened about 3-4 minutes before setting it aside. In the same pan, add the remaining 2 tablespoons oil and cook the chicken for around 10 minutes, stirring occasionally, until it’s fully done. Add the minced garlic, grated ginger, and the rest of the sauce, then simmer for about 6 minutes until the sauce thickens and turns syrupy.

4-Finally, stir the cooked broccoli back into the pan to coat everything in that flavorful sauce, and serve it hot over rice. If you’re adapting for dietary preferences, like using tofu instead of chicken, adjust the cooking time accordingly.
