Ingredients

– 1/4 cup olive oil

– 3 tablespoons red wine vinegar

– 1 garlic clove, minced

– 1/2 teaspoon dried oregano, plus extra for sprinkling

– 1/4 teaspoon Dijon mustard

– 1 English cucumber, cut lengthwise, seeded, and sliced 1/4-inch thick

– 1 green bell pepper, chopped into 1-inch pieces

– 2 cups halved cherry tomatoes

– 5 ounces feta cheese, cut into 1/2 inch cubes

– 1/3 cup thinly sliced red onion

– 1/3 cup pitted Kalamata olives

– 1/3 cup fresh mint leaves

– 1/4 teaspoon black pepper

– Salt, to taste (used in dressing and final adjustment)

Instructions

1-First, in a small bowl, whisk together 1/4 cup olive oil, 3 tablespoons red wine vinegar, 1 minced garlic clove, 1/2 teaspoon dried oregano, 1/4 teaspoon Dijon mustard, salt to taste, and 1/4 teaspoon black pepper to create the dressing.

2-Second, on a large platter, arrange the 1 English cucumber (sliced), 1 green bell pepper (chopped), 2 cups halved cherry tomatoes, 5 ounces feta cheese (cubed), 1/3 cup thinly sliced red onion, and 1/3 cup pitted Kalamata olives.

3-Third, drizzle the dressing over the arranged vegetables and cheese for even coverage.

4-Fourth, gently toss everything together, taking care not to break up the feta.

5-Fifth, sprinkle extra dried oregano over the top and add 1/3 cup fresh mint leaves for a bright finish.

6-Finally, taste and adjust with more salt and pepper if needed before serving.
