1 cup ketchup

2 tablespoons Dijon mustard
1 teaspoon mesquite seasoning or smoked paprika

Β½ teaspoon salt

Brown sugar, garlic powder, onion powder, paprika, chili powders, dried herbs (optional)
Kosher salt and brown sugar for brine (optional)
Instructions
1. Prepare and soak pork chops in brine if using, then rinse and pat dry.
2. Preheat grill to medium heat (400Β°F) or oven to 350Β°F.
3. Oil grill grates or baking dish.
4. Season pork chops with salt, pepper, and optional spice rub. Drizzle with olive oil.
5. For grilling: Cook for 2-3 minutes per side, brushing with BBQ sauce and flipping once, until internal temp reaches 140-145Β°F.
6. For oven baking: Bake covered for 25 minutes, then uncover, coat with BBQ sauce, and bake for 15 minutes until internal temp reaches 145Β°F.
7. Let rest for 5 minutes before serving.
8. Serve with remaining BBQ sauce.
