– 2 tablespoons vegetable oil
– 1 loaf French bread (fresh baked, slightly soft when squeezed)
– 2 boneless, skinless chicken breasts, cut into small bite-sized pieces
– 1 teaspoon seasoned salt (or favorite all-purpose seasoning)
– Fresh ground pepper, to taste
– ¼ cup plus 3 tablespoons BBQ sauce, divided
– ½ cup marinara sauce
– ½ cup thinly sliced red onion
– 8 ounces fresh mozzarella cheese, shredded
– ½ cup shredded cheddar cheese
– 2 tablespoons chopped cilantro, or to taste
Instructions
1- Preheat oven to 425°F. Line a large rimmed baking sheet with foil.
2- Coat a large skillet with 2 tablespoons vegetable oil; heat over medium-high heat. Sauté the 2 boneless, skinless chicken breasts, cut into small bite-sized pieces, until nearly cooked through with no pink remaining, seasoning with 1 teaspoon seasoned salt and fresh ground pepper to taste while cooking.
3- Add 3 tablespoons BBQ sauce to the chicken. Reduce heat to medium; simmer for 3-4 minutes until chicken is fully cooked and sauce thickens. Remove from heat and set aside.
4- In a small bowl, combine the remaining ¼ cup BBQ sauce with the ½ cup marinara sauce.
5- Cut the 1 loaf French bread in half lengthwise and place halves on the prepared baking sheet. Spread the sauce mixture evenly onto each bread half.
6- Divide the cooked chicken evenly over the sauced bread halves.
7- Add ½ cup thinly sliced red onion over the chicken.
8- Sprinkle 8 ounces shredded fresh mozzarella cheese and ½ cup shredded cheddar cheese evenly on top.
9- Bake for 10-12 minutes, or until cheese is melted and bubbly.
10- Remove from oven, sprinkle 2 tablespoons chopped cilantro on top. Let sit for about 5 minutes before slicing and serving.
