Ingredients

– 1 1/2 cups (180g) all-purpose flour

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 2/3 cup (113g) sugar

– 1 cup semisweet chocolate chips (plus more for topping, if desired)

– 3 medium ripe bananas (or 1 cup mashed banana)

– 1/3 cup (75g) melted butter, slightly cooled

– 1 large egg

– 1 teaspoon (5ml) vanilla extract

Instructions

1-Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.

2-Whisk together flour, baking soda, salt, and sugar in a bowl.

3-Mash bananas thoroughly in a large bowl.

4-Add egg, melted butter, and vanilla to the mashed bananas; mix well.

5-Fold the dry ingredients into the wet ingredients until just barely combined (do not overmix).

6-Gently fold in chocolate chips until evenly distributed.

7-Spoon batter into prepared muffin liners. Optionally top with extra chocolate chips.

8-Bake for 17-20 minutes, or until a toothpick inserted into the center comes out clean.

9-Cool muffins slightly before serving.
