Ingredients

– 3 very ripe bananas (medium/large)

– ½ cup unsalted butter (8 tablespoons), room temperature

– 3/4 cup sugar (can substitute honey)

– 2 large eggs, lightly beaten

– 1 ½ cups all-purpose flour

– 1 teaspoon baking soda

– ½ teaspoon salt

– ½ teaspoon vanilla extract

– 1 cup walnuts, coarsely chopped (optional)

– ½ cup raisins (optional)

Instructions

1-Mash the 3 very ripe bananas with a fork until they reach a chunky applesauce consistency, then add them along with the lightly beaten eggs to the butter mixture and blend well.

2-In a separate bowl, whisk together the 1 ½ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.

3-Add the dry ingredients to the wet mixture and stir gently until just combined.

4-Mix in the ½ teaspoon vanilla extract, along with the optional 1 cup coarsely chopped walnuts and ½ cup raisins if desired.

5-Pour the batter into the prepared loaf pan, spreading it evenly.

6-Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.

7-Let the bread rest for 10 minutes in the pan before transferring it to a wire rack to cool completely.
