Ingredients

– 1/2 cup unsalted butter for light texture and rich flavor; keeps the crumb tender

– 3/4 cup granulated sugar to sweeten and tenderizes; honey option adds extra moisture and depth

– 2 large eggs to bind the batter for lift and structure without toughness

– 1 1/2 cups all-purpose flour for structure

– 1 teaspoon baking soda to react with bananas acidity for rise and tender crumb

– 1/2 teaspoon salt to balance sweetness and enhance flavors

– 1/2 teaspoon vanilla extract to add warm aroma that complements banana

– 1 cup walnuts toasted and chopped for fragrance, crunch and nutrition

– 1/2 cup raisins for chewy bursts of sweetness

Instructions

1-Preheat and Prep Pan: Heat oven to 350°F (175°C). Grease and flour the loaf pan well to prevent sticking. For gluten-free, use parchment sling for easy release.

2-Toast Walnuts if Using: In a dry pan over medium heat, stir 1 cup walnuts until fragrant, about 3-5 minutes. Cool, then coarsely chop. Skip for nut-free; sub seeds for vegan crunch.

3-Cream Butter and Sugar: In a large bowl, beat 1/2 cup (113 g) room temperature unsalted butter with 3/4 cup (150 g) granulated sugar until light and fluffy, 2-3 minutes by hand or mixer. For low-cal, use 1/4 cup butter + 1/4 cup yogurt.

4-Mash and Mix Wet Ingredients: Mash 3 very ripe medium/large bananas to chunky texture. Stir into butter-sugar with 2 lightly beaten large eggs until blended. For eggless moist banana bread, use 2 flax eggs here.

5-Combine Dry Ingredients: In another bowl, whisk 1 1/2 cups (190 g) all-purpose flour, 1 tsp baking soda, and 1/2 tsp salt. Add to wet mix and stir gently just until combined, avoiding overmix for tender crumb. Use GF flour for gluten-free.

6-Fold in Flavor Boosters: Gently fold in 1/2 tsp vanilla extract, toasted walnuts (1 cup/100 g), and raisins (1/2 cup/75 g) if using. Toss add-ins in 1 tbsp flour to suspend them evenly.

7-Fill and Smooth Batter: Pour into prepared pan, smooth top with spatula. Tap pan lightly to release air bubbles for even rise.

8-Bake to Perfection: Bake 55-60 minutes at 350°F until toothpick in center comes out clean or with moist crumbs. For convection, reduce to 325°F; glass pan lower to 325°F. Check at 50 minutes.

9-Cool Properly: Rest in pan 10 minutes, then transfer to wire rack. Cool completely before slicing for best texture. Warm slices taste great too.
