Instructions

1-First Step: Mise en place and oven prep Preheat your oven to 350°F. Line a baking sheet with foil or parchment to catch any oozing cheese. Gather your ingredients: one bread boule, one 12-ounce wheel of brie (top rind removed), 1/2 cup whole berry cranberry sauce, 2 tablespoons fresh thyme leaves, 2 tablespoons olive oil, kosher salt, and fresh ground pepper. Having everything ready trims actual hands-on time to about five minutes.

2-Second Step: Hollow the loaf and prepare the pull-apart cuts Slice the top quarter off the bread boule to create a lid. Use the brie wheel to measure and trace a circle in the middle of the loaf and scoop out the bread from that circle to form a bowl for the cheese. Save the extra bread you scoop out for toasting and dipping. Now cut vertical slices around the edge of the loaf, about 1.5 inches apart, cutting three-quarters of the way through but not through the bottom. These cuts create pull-apart pieces that are perfect for scooping molten brie.

3-Third Step: Seasoning and assembly Brush the inside of the hollowed bread with 2 tablespoons of olive oil. Sprinkle kosher salt, fresh ground pepper, and half of the fresh thyme leaves inside for seasoning. Place the brie wheel into the hollowed center. 4-Fourth Step: Baking Place the assembled bread bowl on the lined baking sheet to catch any cheese that may ooze. Bake at 350°F for about 20 minutes. Baking times vary depending on oven accuracy and bread thickness; if the brie is not fully melty after 20 minutes, tent the loaf with foil and bake an extra 5-10 minutes until the cheese is bubbly. 5-Final Step: Serving and finishing touches Remove from the oven and let rest for 2 minutes. Toast any extra bread you scooped from the middle for extra dipping pieces if desired.
