Ingredients
– 12 ounces thick-sliced bacon
– Kosher salt to taste
– 3 large egg yolks
– 1 large whole egg
– 1/2 cup freshly grated Parmesan cheese
– 1/2 cup freshly grated Pecorino Romano cheese
– Freshly ground black pepper to taste
– 1 pound dried pasta such as spaghetti, bucatini, fettuccine, or linguine
– 1/4 cup chopped fresh Italian parsley
Instructions
1-Getting started with bacon carbonara pasta means setting up your space for success: Begin by preheating the oven to 400 degrees Fahrenheit and lining a baking sheet with paper towels. Arrange the bacon on it and bake for 15-20 minutes until it’s crisp, then chop it up for later use.
2-While the bacon cooks, bring 4-5 quarts of salted water to a boil and cook 1 pound of dried pasta until it’s al dente. Don’t forget to reserve 3/4 cup of the cooking water before draining. In a separate bowl, whisk together 3 large egg yolks, 1 large whole egg, 1/2 cup freshly grated Parmesan cheese, 1/2 cup freshly grated Pecorino Romano cheese, Kosher salt, and freshly ground black pepper to form the base of your sauce.
3-To make the sauce creamy, temper the egg mixture by whisking in 1/3 cup of the hot pasta water. This step helps avoid curdling and keeps things silky. Quickly toss the hot pasta with this mixture, adding more reserved water if needed for the right consistency, then stir in the chopped bacon and 1/4 cup chopped fresh Italian parsley. Serve right away to enjoy the best flavors.
