Ingredients

– 1/4 teaspoon finely ground black pepper

– 1/4 teaspoon ground allspice

– 2 large eggs

– 1 cup granulated sugar

– 1/2 cup packed light brown sugar

– 1 1/2 cups unsweetened applesauce

– 2/3 cup vegetable oil

– 1 teaspoon pure vanilla extract

– 1/2 cup packed light brown sugar

– 1/3 cup heavy cream plus more as needed

– 4 tablespoons unsalted butter cut into chunks

– 1/4 teaspoon kosher salt

– 3/4 cup sifted powdered sugar plus more as needed

Instructions

1-First, preheat your oven to 350°F and prepare a 12-cup Bundt pan by buttering and flouring it.

2-In a medium bowl, sift together the dry ingredients: 2 cups all-purpose flour, 2 teaspoons ground cinnamon, 1 1/2 teaspoons baking soda, 1 teaspoon ground ginger, 1 teaspoon kosher salt, 1/4 teaspoon finely ground black pepper, and 1/4 teaspoon ground allspice.

3-Next, in a large bowl or stand mixer, beat 2 large eggs with 1 cup granulated sugar and 1/2 cup packed light brown sugar until they turn light and airy.

4-Then, mix in 1 1/2 cups unsweetened applesauce, 2/3 cup vegetable oil, and 1 teaspoon pure vanilla extract until smooth.

5-Gently fold the dry ingredients into the wet mixture, being careful not to overmix, and pour the batter into the prepared pan.

6-Bake for about 45 minutes or until a tester comes out clean, then cool in the pan for 10 minutes before transferring to a wire rack.

7-For the glaze, combine 1/2 cup packed light brown sugar, 1/3 cup heavy cream, 4 tablespoons unsalted butter cut into chunks, and 1/4 teaspoon kosher salt in a saucepan.

8-Bring to a boil while stirring, boil for one minute, cool slightly, and whisk in 3/4 cup sifted powdered sugar until pourable.

9-Pour over the cooled cake and let it set.
