Ingredients

– 1 large red bell pepper

– 1 large orange bell pepper

– 1 red onion

– 1 medium zucchini

– 1 tablespoon avocado oil

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 teaspoon Italian seasoning

– ½ teaspoon kosher salt

– Pinch of black pepper

– 1 package (12 oz) chicken sausage

Instructions

1-First, chop all veggies and place them in a large bowl to prepare them for seasoning.

2-Drizzle the veggies with 1 tablespoon of avocado oil and toss to coat evenly for a light, crisp finish.

3-In a smaller bowl, mix the spices, including 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon Italian seasoning, ½ teaspoon kosher salt, and a pinch of black pepper, then add them to the veggies and toss well.

4-Slice the chicken sausage into ¾-inch rounds and add it to the veggie bowl, then toss everything together for an even mix.
